Life Lately

Hi friends!! I am feeling so energized these days! Mentally and physically. I’ve been getting up early (I even hit the gym at 5am yesterday!) and working like crazy in a totally good way. I wonder if it’s related to weaning over Christmas? Probably! It seems like hormones rule the world. Do I sound jazzed?! Maybe I just had too much coffee…! Update on KERF I have been furiously working on all the things these past two weeks. It’s been SO nice to let go of my old posting schedule and just flow. I’ve been working on a homepage redesign (with professionals for the first time ever (!) ), a brand new media kit, tons of small updates to older pages...

Pantry 2020 Basics

Check out these basics for our 2020 pantry. (You can also download this list as a handy PDF and save it on your phone!) When you’re stocking your pantry, take note of storage and best-before dates. Nuts and certain whole grains are higher in fat and are best stored at 50 to 70 F (10 to 20 C) in a clean, dark cupboard. For longer storage, refrigerate or freeze. Top 10 Tips for Cooking Dried Legumes

Legumes are a class of vegetables that include beans, peas, and lentils. Chock full of nutrients and high in fibre, cooked legumes can be added to any number of dishes. And they’re the quintessential healthy substitute for meat. Follow these quick tips for perfect results. Pick through dried beans, legumes, and lentils, and discard shrivelled or discoloured ones before soaking. Rinse and drain well. Soak beans and legumes in the refrigerator overnight in a 1:3 ratio of beans to water. (Lentils, split peas, and black-eyed peas do not require soaking.) To quick soak, bring legumes to a boil in a stockpot in a 1:3 ratio of beans to water. Cover and set aside at room temperature for up to 4...

Why Winter Walks Are My Favorite

Winter Walks Are My Favorite Crisp winter walks are SO refreshing! I do not care for winter unless I am wearing a down coat and moving. In the summer walks are great, but the sun is just so darn hot, and you have to take a shower at the end of your walk. But in the winter you can walk for miles without breaking a sweat if you dress appropriately. Therefore you can fit one into any part of your day. In the winter I tend to go to the gym in the morning (outdoor sweat workouts are minimal) but I love to add in an afternoon walk. The Key Is Bundling Up! A down coat (I have this one)...

What I Ate Wednesday + Day In the Life

Hiya, friends! How is life? Can I just say that I’ve been living on herbal tea and elderberry gummies lately, which I will continue to eat even when I’m not feeling under the weather simply because they’re so darn tasty! I thought it would be fun to do another “day in the life” since things have been really busy with Alchemy Meal Prep launching next month. I bounce around between several initiatives throughout the day, and that’s what keeps me feeling energized. I often get asked what exactly I do, so hopefully these glimpses can provide some clarity. 6:45am: Wake up, pour myself some coffee into my Yeti mug (we set it to brew automatically, game-changer). Open the Associated Press...

Overnight Oats

Overnight oats are one of the most popular ways to eat oats – for a good reason! This simple no-cook recipe is versatile, portable, filling, nutritious, and convenient. I’m updating my old KERF page as a new post with everything you need to know about one of my favorite breakfasts! // {Jump to Recipe} What Are Overnight Oats? Overnight oats are oats soaked in the liquid you put them in – any kind of liquid you like but most commonly milk – for a few hours up to a day or two. Generally the ratio is 1:1 oats to milk, and I like a third component of yogurt for a 1:1:1 ratio. Chia seeds also help the whole mixture gel...

Brussels Sprout Kale Caesar Salad with Rosemary Croutons

This Vegan Brussels Sprout and Kale Caesar Salad is healthy spin on the classic with crisp Brussels sprouts, crunchy homemade rosemary croutons and a delicious dairy-free cashew caesar dressing. Great for a crowd! It’s a bird! It’s a plane! It’s a Brussels Sprout Kale Caesar Salad! We’re salading with the best of ’em today, friends. I whipped up this kale salad with cashew caesar dressing back in December when I had all the ginger molasses and peanut butter cookies to share and sadly, this salad got temporarily put on the back burner. Not that salad isn’t worth celebrating! You folks now how much I love a meal-worthy salad. Not only do I require crunch, tang, and creaminess, but I also...

What I Ate: Real Meals + Adventures

Cook Once, Eat Twice We made some epic shrimp and grits last weekend! Classic and rich with mushrooms and peppers. They were even better as leftovers the next day. Often times we make extra food on Sundays to carry is to Mondays. Cook once, eat twice style! Pork Tenderloin with Rice + Asparagus Daily Harvest FTW As an ambassador for Daily Harvest, we eat a lot of smoothies! One cup usually serves me plus one child (because I use more milk than the cup calls for!) so it’s kind of a two for one deal. If you’ve wanted to try them, I have a $25 off your first order discount to share with the code katheats. The bigger the bowl,...
